In such circumstances it makes no sense to default to today, or even to this century. Given the median age of people who are getting vaccinated, starting at the Unix epoch and having users scroll back or forwards from there would make a lot more sense, and would likely be easier to program than a system that makes everyone scroll back from today's date. Particularly as nobody would ever likely have to scroll fewer than several years on such a system.
