Just learned about it a few days ago, pretty wild.
Having an intact glycocalyx is important to health for reasons that I won't pretend to fully grasp, but starting with good nitric oxide production and smooth blood flow and protecting the endothelial cells.
But I am seeing a claim that just one high carb meal with decimate the glycocalyx and that is implied for the whole body or at least all of the smallest capillaries. I could see chronic severe hyperglycemia being a problem, but one candy binge?
Seeing Dr Hans Vink talking about it, seems to be selling sGlycoCheck but that does not mean he is wrong. The glycocalyx is a real thing, just trying to get perspective on it.
